The Perfect Breakfast – part 1

The weekend breakfast should be an epic one, in my opinion. Reasons why?
1. Nutritionists say it ‘s the most important meal of the day.
2. I love breakfast.
3. I love weekends (who does not love their days off?)

Plus, I wanted to surprise and spoil my mom a bit.

Thus last saturday this was the result: some spongy, tasty and almost skinny buttermilk waffles, with strawberries, apple syrup, strawberry jam and homemade peanut butter.
Could you resist? It was the perfect start for a busy (and funny) day.
Preparing the table (trying to get classy…)

Buttermilk WafflesThe original recipe here, following my version:

Ingredients (yeld: 3 waffles)
1/2 cup (70 grams) white flour
a pinch of salt
1 tbsp agave or apple syrup
1 tsp baking powder
1/2 cup rice milk
1 egg
2 tbsp olive oil

Mix the dry ingriedients. In a separate bown mix the wet ones.
Pour the wet ingredients into the dry ones, stirring well.
Put a spoonful of batter on the waffle iron and cook for a couple of minutes.
Add anything you prefer on top: nuts, peanut butter, jam, syrup, Nutella..

I love the plain version with some jam. Sweet and simple.
